Ember & Oak

Overview

A chef with a waiting list and a room nobody photographed. Ember & Oak needed an interior with the same confidence as its tasting menu — dark, generous, and unmistakably its own.

Challenge

Ninety covers, an open fire kitchen and neighbours above meant acoustics and extraction ruled the plan. The dining room had to absorb sound while keeping the theatre of the flame visible from every table.

Solution

Charred-oak screens break the room into four intimate chambers; wool baffles hide above lime plaster. Tables are set for the fire — banquettes face the kitchen, and the chef's counter seats twelve at the pass itself. Covers rose by a third within the first quarter.
